The first pancakes (or τηγανίτες in Greek) can be dated back to the Trojan War, when famous heroes like Achilles, Odysseus and Ajax used them to settle internal arguments among their men. The quarrelling soldiers would have to strip down and cover themselves in oil before flinging a pancake at their opponent. The pancake that stuck to the skin the longest was the winner. The great tragedian Aeschylus was said to have written a play about a pancake struggle between Achilles and Agamemnon, thought to have been called Pancakes on the Plains of Troy (Homer omits this from the Iliad for some reason), but, like so much of his work, it has sadly been lost.

With the birth of Christianity came a new phase for the pancake, marking the start of Lent. This period involved heavy metaphor for all ingredients used. The cracking of the egg (representing the female) into the flour (representing the male) symbolised fertility and rebirth - a big theme for Easter and spring. The milk was the children the union would produce, 'binding' the ingredients together like a family. Consuming the pancake once cooked was considered to be tremendously good luck, and it was served to all newlyweds on their wedding night. The rumour was, if you had it with honey, you were more likely to conceive a son.

Pancake sorting is the colloquial term for the mathematical problem of sorting a disordered stack of pancakes in order of size when a spatula can be inserted at any point in the stack and used to flip all pancakes above it. A pancake number is the minimum number of flips required for a given number of pancakes. In this form, the problem was first discussed by American geometer Jacob E. Using a palette knife, gently flip the pancake over and cook on the other side for a few seconds, until lightly browned. Slide the pancake onto a plate, cover with greaseproof paper and keep warm.
Medieval pancakes were believed to protect you from diseases (pinning one to your door was thought to ward off the dreaded sweating sickness), and they were used copiously in France to dress wounds, particularly during the St Bartholomew's Day massacre of 1572 (cheaper than bandages, you see, but just as absorbent). And the reason the French flambé a crêpe Suzette is not to enhance the flavour of the sauce, but because they still haven't forgiven us for burning Joan of Arc.

Pancakes then became enormously popular among European royalty in the 1700s as skin protectors against the harmful rays of the sun. The pancakes would be cooked and allowed to cool before being placed directly over the face of the monarch. The natural fat in the milk would act as a softening agent, reducing fine lines and keeping the skin moisturised. It also stopped kings and queens having to look at poor people, which they always loathed.

Nowadays, pancakes - while remaining popular - have lost some of their mystique. Commonplace among purveyors of street food, they are popular with such ingredients as Nutella or ice cream. Or, for those with constitutions of iron, both. So, before you douse yours in fake lemon juice from a squeezy plastic lemon and enough sugar to bring down a rhino, perhaps hold it aloft or throw it at someone, or place it delicately over your face. Inhale the weight of its history. The pancake, in all its majesty, deserves your reverence.
